I’m excited about this week’s pin to plate, it’s a recipe I’ve been anxious to try: Grilled Coconut Sweet Potato Kebabs! Coconut oil seems to be sneaking its way into many homes, and the combination of the sweet potato and coconut sounds too good to pass by.
Here’s what you’ll need to whip them up for your hungry kids:
- 2 or more medium to large sweet potatoes, cleaned & cut into 1-2 inch pieces
- 1 tablespoon unrefined Coconut Oil
- Salt to taste
- Unsweetened Coconut Flakes
- For the optional dip: fat-free Thick Greek Yogurt or Whipped Cream (vegan or not), sweetened to taste with your favorite natural sweetener
